Marshmallow Popcorn Cupcakes

Hi everybody!  It’s been too long since we have talked … so nice to be back 😉  How have you been?  Did you have a nice summer?  I did receive some emails from readers … thank you so much … I’m fine and back!  Kids are back in school, autumn officially begins next week and summer weather continues in my neck of the woods!  Today, I’m sharing a little project that I took to a friend’s “movie night” earlier this summer.  She and her hubby hosted an outdoor movie in the cul-de-sac for neighbors and friends … Marshmallow Popcorn Cupcakes seemed very appropriate …

I made mini-cupcakes, frosted them and added marshmallows … used yellow sugar as the “butter”!  Now that I look back on the photos … more marshmallows could have been added for a fuller appearance, but it didn’t stop them from being snatched up!

Oh, the movie we watched was an old Lucille Ball movie … The Long, Long Trailer.  If you are a trailer owner, you’d probably appreciate the humor in it!  The hubby and I own a very short trailer and you will never find me in a dress, heels and pearls cooking dinner in the trailer 😉  However the hubby and I finally painted our trailer this summer … honestly, he painted and I applied the pin-stripping …

Not too bad for a couple of amateurs and ordinary cans of spray paint … please don’t stand too close … you’ll see a few boo-boos 😉

Back to the cupcakes … one box of cake mix yields about 36-48 mini-cupcakes.  My paper liners were on the taller side and I got 36 cupcakes.  I used the entire bag of marshmallows, but you can see in the photos that I didn’t make each marshmallow into “popcorn” … my hands got tired, that’s a lot of marshmallows!  I probably did about 2/3 to 3/4 of the 10 ounce bag and just filled in with the remaining marshmallows.

  • Mini-cupcakes (36-48)
  • Vanilla frosting
  • 1/2 cup yellow sugar
  • 10 ounce bag mini-marshmallows

  1. Using scissors, cut an “X” in marshmallows  about half-way down.  (The scissors do get sticky and will need to be cleaned off occasionally.)
  2. Holding the uncut side of the marshmallow, dip the cut portion into the yellow sugar.
  3. Continue with remaining marshmallows.

5.  Frost cupcakes, apply marshmallow popcorn and sprinkle remaining yellow sugar on          cupcakes if desired.

It truly is nice to be back … the hubby even asked me if I’m ever going to blog again!  I think that’s “hubby talk” for “When are going to make some cookies or brownies?”

  1. Trust me – we were getting pretty worried about you. No mention of you going on vacation or just taking a blog break so the question was – is she OK? That’s the most important thing.

    So glad to hear you’ve been maybe taking a trip in your trailer and not surprised it got a make-over. You make-over everything and it always turns out wonderfully.

    Have been without internet service here on this end for awhile so it’s nice to be connected once again.
    Awesome looking cupcakes and so darn cute for a child’s sleep over party.
    Tip: trying spraying your scissors with alittle cooking spray and that should help somewhat with the stickiness .

  4. Oh, you would want to spray the oil on a paper towel and then with a quick swipe, run it across you scissors.
    OR:
    Dipping your scissors in warm water: Before cutting each marshmallow allows the scissors to almost melt through the marshmallow leaving no residue behind.
    OR
    Lightly coat scissors with oil: Blot a paper towel with a small amount of oil and lightly coat the scissors. (LIGHTLY! You don’t want oily marshmallows!) A light touch of oil on your scissors makes them slippery enough that the marshmallow will not stick to the scissors, but results in a quick, clean cut.

      • you’re just going have to move closer and you can bet that I would be over to give you a helping hand. :} Only thing is; I will have to buy 2 bags of marshmallows cause I probably would end up eating most of them and wouldn’t have many for the cupcakes.
        At least next time when you decide to cut up some marshmallows, you will know what to do. :}
