Bunnies are just so stinkin’ cute! May I assume that we all feel the same way? Their soft fur, wiggly noses, velvety ears and cute little butts … make me melt! We had a pet rabbit … given the name Reject (out of love) because he had one ear up and the other ear down. Reject was a great pet and loved cookies, but not these cookies. Today, I made Bunny Paw Cookies because bunny feet are just too cute! I hope the Easter Bunny approves of these buttery and sparkly cookies!
I used to buy big tubs (Costco) of cinnamon flavored alphabet cookies for the kids and Reject. Whenever I hear the expression “dangle a carrot in front of …”, I visualize a rabbit with a carrot. Our quirky little rabbit would follow me anywhere when I would dangle an alphabet cookie in front of him!
My favorite Butter Cookie dough, rolled in coarse crystal sugar was the perfect choice for Bunny Paws. Chewy cookies with the crunch of coarse sugar are #1 in my book! Pretty pink candy melt discs worked great for making the cute pads on the bottom of the feet.
Bunny Paw Cookies
- 1 cup butter, softened
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla bean paste (or extract)
- 2-3/4 cups flour
- 1/2 to 3/4 cup clear/white coarse crystal sugar for rolling
- 36-48 pink candy melt/candy coating discs
- 1/2 cup melted pink candy coating (in a squeeze bottle or bag)
- Preheat oven to 350°F. Line baking sheets with parchment.
- In a large bowl, use a mixer to cream butter and sugar.
- Add egg and vanilla, beat well.
- Add about half of the flour and beat well, add remaining flour and beat well.
- Roll dough into 1″ balls, then form dough into egg shape and flatten slightly. Roll dough in sugar and place on prepared baking sheets about 2″ apart.
- Bake 9-12 minutes. Remove cookies from oven, immediately place a pink candy disc on the smaller end (heel) of each cookie, press slightly. Let sit on baking sheet for a few minutes before removing to a cooling rack. Use melted candy to make four dots (as toe pads) on the wide part of the cookie.
I’m pretty sure these cookies are Easter Bunny approved! They are definitely Peanut Butter Man approved!
I apologize for running so far behind in Easter projects … been battling a cold. A few more ideas are on their way … promise!

Those are the cutest bunny paw cookies I have ever seen and you managed not to melt your squeeze bottle. :}Don’t bunny’s only have 3 dots at their ‘toes’.
You know what be cute to go along with these, is to make the butt end of the bunny using round cookies, adding 2 back paws and mini marshmallow for it’s tail. :}

I be darn. Learned something new. thank you. I guess all them years when the girls where younger and I made holiday Easter cookies that mine where rejects as they only had 3 toes. Girls didn’t care, as they ate them anyway. Good; no matter how many toes where added which is the main thing. :}

Colleen, you are not alone … do you know how many years I made Easter Bunny tracks for my kids? I would dip my 3 fingers (no pinkie) and thumb in egg dye, then touch paper towels and leave them by the dyed Easter eggs! They fell for it … that bunny was soooo busy dying eggs, LOL 😉
