Good Black Friday morning everyone! How are you today? Have you been out Christmas shopping? I’m thinking about going out later … not sure if I want to fight the crowds.
I was hoping to share a recipe for a pumpkin muffins today … always a nice breakfast treat … things happened … things being frosting. Can we have muffins with frosting? I think my muffins morphed into cupcakes … so I’m sharing a cupcake recipe … you can call them whatever you like 😉
These came about because of another potluck contribution for Son #3 to take to work. He left all decisions up to me and I had one of those moments where I couldn’t make a decision … I’ll make those simple pumpkin cookies with a spice cake mix and a can of pumpkin … maybe with some extra spice … how about muffins … with buttermilk and nuts … oh, those muffins look plain … I’ll add frosting … maple cream cheese frosting … yeah, that’s it … guess they’re cupcakes 😉
Pumpkin Mini Cupcakes with Maple Cream Cheese Frosting
For the cupcakes –
- 1 box spice cake mix (18.25 ounces)
- 1 can pumpkin (15 ounce – not pumpkin pie mix)
- 1 tablespoon pumpkin pie spice
- 1/2 cup buttermilk
- 3/4 cup chopped pecans
For the frosting –
- 1 package of cream cheese (8 ounces), softened
- 1/4 cup butter, softened
- 1 teaspoon maple flavoring
- 4 cups confectioners/powdered sugar
- Preheat oven to 350°F. Line mini muffin pans with 48 paper liners.
- In a large mixing bowl combine cake mix and pumpkin pie spice. Add pumpkin and buttermilk and mix well. Stir in pecans. Mixture will be thick.
- Scoop into prepared pans (I used a cookie scoop) and bake for 14-16 minutes. Cool completely.
- Make frosting – Beat cream cheese and butter until combined, stir in maple flavoring. Add powdered sugar and beat well.
- Place frosting in decorating bag with #19 tip and frost in a swirl. Makes 48 mini cupcakes.
We had too many cupcakes and shared with the neighbors …

They sound really awesome,except my daughter would omit the Maple Flavoring as she doesn’t like it & I’m not to fond of it myself. Sorry. I do really enjoy receiving your Recipes.

Oh YUM. These look wonderful.
Must say; I’m not much for the maple flavoring but do like to use the Real Maple syrup instead. I like using the real stuff whenever possible. Just not much for the artificial flavorings right down to homemade vanilla…..using vanilla beans and vodka

Thanks Colleen 😉 I was going to use maple syrup and decided that it may thin the icing down too much. I do prefer natural flavors, too! Enjoy your weekend too!

I start out using just a bit at a time; about 1/8 t. and if I feel it needs more then will add just a tiny bit more. Can always add but can’t take out.
