Spiced Up Spice Cake

Yesterday I shared these cupcakes …

with a tutorial for making the candy birds.  Today I am sharing the simple recipe for the cupcakes.

It is no secret that I like to use cake mixes … sometimes I make a few changes to them … this is one of those times! By adding buttermilk, using 4 eggs and adding extra spices, the cupcakes tasted more like a cake made from scratch.

Spiced Up Spice Cupcakes

  • Duncan Hines Spice Cake Mix
  • 4 eggs
  • 1 cup buttermilk
  • 1/3 cup canola oil
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  1. Preheat oven to 350°F.  Place 24 paper liners in cupcake pans.
  2. Place all ingredients in a large mixing bowl.  Mix on low-speed for 30 seconds, scrape sides of bowl and mix for an additional 3 minutes on medium speed.
  3. Pour batter into cupcake pans.  Bake for 18-25 minutes.  Cool completely.
  4. Frost cupcakes with Cream Cheese Frosting.  Use a disposable pastry bag fitted with a 1M tip.

  1. Oh, I double that thought. Yummmmmmmmm, Yummmmmmmmmmmm.
    I have all the ingredients so will be making these later today. Just gotta get my cake mix out of the freezer and set out to room temperature.
    Yes, I stock up on cake mixes when on sale and store in the freezer and bring them to room temperature before using.

    • I feel so stupid! The reason that I made spice cake … I found it in the back of the cabinet and it was past its expiration date (please don’t judge me)! I have a big freezer in the garage … keep my flour in it … why have I not put cake mixes in it? Thank you so much for that idea!

        When I buy cake mixes I keep an inventory. On sheet of paper I will write down the cake mix flavors that I had bought and with magnet, post on front of freezer door. When a flavor is removed from the freezer I mark it off the list. That way I Always know what I have and don’t have in cake mix flavors.
        If I remember, I always try and get the mix out the night before I plan on using it so that it has plenty of time to get to room temperature. You don’t want to mix something up while the mix is still cold.
        Oh, I also keep my bags of flour in the freezer.
