Pot of Gold at the End of the Rainbow Cupcakes

St. Patrick’s Day is on Saturday this year … that may mean more parties!  Do you have plans?  Do they involve cupcakes?  Here is an idea for you … Pot of Gold at the End of the Rainbow Cupcakes … they’re easy peasy 🙂

Pot of Gold at the End of the Rainbow Cupcakes from SweetSimpleStuff

This what you will need …

  • Cupcakes
  • Frosting, coupler and decorating bag
  • AmeriColor Leaf Green food coloring
  • American Gold Disco Dust or try other edible gold dusts available in the cake decorating dept.
  • Multi-strand or Grass Tip (Ateco #133 or Wilton #233)
  • Mini marshmallows
  • Toothpicks or small lollipop sticks or small pretzel sticks
  • Air Heads Xtremes Belts (8-10 per package)
  • Melted Dark Chocolate (oops, forgot in the photo)
  • Flower Sprinkles – optional (oops, again)

Make the rainbows first.  Make sure that your toothpicks/sticks are just a little taller than your cupcakes.  I used one belt per rainbow … but I do think that 1/2 of a belt could be used …

Insert the stick into the marshmallow and dip it in the melted chocolate …

Then carefully and barely dip the end in the gold dust …

Lay the “pot of gold” on the end of the candy “rainbow” … the chocolate is still melty and will stick to the rainbow …

Continue until each rainbow has a “pot of gold” at each end …

Remember to measure your sticks before you start to make the rainbows … don’t be like me …

Now make the cupcakes … color the frosting green and fill the bag with some.  Spread a thin coat of green frosting on the cupcakes …

This decorating tip is one of the best inventions!  You can use it to make grass or fur quickly …

Adding “grass” to the cupcakes really helps dress it up … just hold the tip to the cupcake, squeeze and release as you pull away from the cupcake …

Add the rainbows …

Sprinkle some flowers … just to add a little color …

I told you that it would be easy peasy!
