Are you hosting a Super Bowl party? Are you going to a Super Bowl party? Are you going to consume nachos? I am sure that you would surprise everyone if you served these nachos! OK, it’s not April Fools Day … they’re Nacho Cupcakes …
These cupcakes were inspired by a cheesecake in the book, “Cupcakes, cookies & pie, oh, my!”. The cheesecake is named Nacho Normal Cheesecake … I wanted to be clever and give these cupcakes a name like Nacho Mama’s Cupcakes … translation – Not yo’ (your) Mama’s Cupcakes! But I decided that a basic name might be a better choice.
These are so simple to make … you will be able to whip them up in no time!
- First, bake 24 of your favorite cupcakes (I used Duncan-Hines Chocolate fudge cake mix) and let them cool completely.
- Make the chips … Use 2 large flour tortillas (about 10″), cooking oil spray and cinnamon-sugar (1/4 cup sugar mixed with 1/2 teaspoon cinnamon). I always have cinnamon-sugar in my bear shaker. Use a baking sheet lined with parchment paper …
- Use a pizza wheel or scissors to cut the tortilla into small triangles. Spray with cooking oil spray and sprinkle with cinnamon sugar. Bake at 425° for 5 minutes.
- Make my Easy Buttercream Frosting and add yellow food coloring to it …
- Then add just a drop or two of orange, to make it nacho cheese color …
- I used AmeriColor Egg Yellow and Orange …
- To assemble the cupcakes, you will also need strawberry or raspberry jam (salsa) and green straw like (Sour Punch Bites) candy (jalapeno slices) …
- Put the icing in a pastry bag and just cut off the tip of the bag … gather all of the other nacho fixin’s together …
- Squeeze the icing (cheese) on the cupcake … neatness not required …
- Spoon a little jam (salsa) on top …
- Stick a few (3-5) chips in the icing …
- Sprinkle with green candy jalapeno slices …
These could be the sweetest nachos you will ever make …
This morning I had an idea … put all the cupcakes close together on a platter … it really could look like a platter of nachos … sadly, I could not take a photo of this … my family ate all the cupcakes 😦 and son #3 has decided that … icing + jam = AMAZING!

I just made these for a Mexican Cinco De Mayo pot luck we’re having at work (a day early) They turned out really cute. I was sad that I could not find the punch things, so a friend suggested green fruit loops, which worked out good too. 🙂 Thanks for the idea!

Sure, add any spice that you like, maybe nutmeg. It just adds a little color. How about substituting a little chili powder for a spicier variation? Let me know what you do 🙂

I would assemble the cupcakes with everything except the chips. Go ahead and make the chips the day before and store them in an airtight container … then add them before serving or displaying 🙂

Hi Christina, I found the sour punch bites at my grocery store (Von’s/Safeway). They were in a hanging bag. I believe that you could substitute green licorice or any other green gummy type candy. Do you have one of those candy stores (in many malls) that let buy candy by the 1/4 pound? Let me know how the cupcakes turn out 🙂

I looked all over for those sour punch bites, and it looks like they aren’t in stores anymore! I cut up the green ends of sour gummy worms instead. I also did lemon cupcakes & dyed them orange to try to match the icing.
