Fondue S'mores

We returned home a few days ago from a camping trip that did not include s’mores … a true violation of my camping rules!  So … I made these s’mores at home … definitely worth the wait ;)

I was very happy to receive a package of Emmi Swiss Chocolate Fondue in the mail … just what I needed to create this yummy simple dessert.  This fondue comes ready to use … just melt it, yeah!  This is how it starts …

Graham crackers, marshmallows and chocolate are all present in my Fondue S’mores … in a little different form.  This is what you will need …


Fondue S’mores

  1. Prepare a 9″ x 13″ pan and a spatula by buttering (or spraying with nonstick cooking spray)
  2. In a large pan (I used a 6 quart), melt butter over low heat.
  3. Add 6 cups mini marshmallows and stir until completely melted.
  4. Remove from heat and add cereal, stirring until all cereal is coated.
  5. Add remaining 4 cups mini marshmallows and stir to combine.
  6. Spread in prepared pan using buttered spatula.
  7. Let cool at least 1 hour and cut into squares.
  8. Melt chocolate fondue according to package directions and serve with cereal squares.

Family Poll … Hubby, Sons #1 and #3 … 6 thumbs up!  Son #2 (whom I should name the critic)… says the cereal squares did not need the extra marshmallows added.

Celebrate S’mores Day with these …

Lemon Meringue Vanilla S'mores

A bag of Lemon Meringue Marshmallows have been in my cupboard just waiting for a reason to be opened.  Today was the day … in honor of S’mores Day, August 10!

These s’mores are a definitely not your typical ones … they are not only lemon, but I used Vanilla CandiQuik too!  That’s right lemon marshmallows and white chocolate/candy coating on graham crackers … yum!

There is one more thing that I should mention … they are so easy peasy to make.  You could actually get everything assembled several days in advance!  No campfire is necessary … they are toasted in the oven … literally in a minute!

I do love traditional s’mores … but it nice to mix things up once in while.  The marshmallows have a nice tart lemon flavor that is balanced by the sweet smooth vanilla flavor from the CandiQuik … of course the graham crackers are crunchy, just like they should be!  Make them … I promise that you will be happy :)

White chocolate lemon s'mores

You will need just three ingredients …



  1. Melt the candy coating according to package directions.
  2. Spread the candy on each graham cracker. (You will need 2 graham crackers to make 1 s’more)
  3. Place 4 lemon marshmallows in the melted candy on one half of the graham crackers. Chill for a few minutes or let stand until candy has hardened.  (at this point you could place everything in an air tight container and store it at room temperature for a few days)


  1. Turn the oven broiler on and let it heat up.
  2. Place the graham crackers with marshmallows on a foil lined (for easy clean up) tray.  Keep the graham crackers with candy only aside.
  3. Place the tray under the broiler and watch it constantly … this toasty brown color happened in 1 minute!!!
  4. Remove the tray from the oven and place a candy coated graham cracker on top and press it down to attach and make the marshmallows squish a little ;)

S’mores in Cones

Do you ever have one of those “why didn’t I think of that” moments?

S’mores in Cones is one those moments for me!  I saw the idea somewhere (can’t remember where) and thought “I want to do that … a little different” …

Ooey Gooey S'mores in Cones

I love S’mores … I hate assembling them in the dark … I love toasty marshmallows … I hate the sticky melted marshmallows all over my hands … making S’mores in chocolate lined cones has got to be the answer!  Now … if I can only find an answer to fix my sentence structure ;)

When we go camping, S’mores will be made … it’s a rule.  After dinner, in the dark, we are trying to unwrap candy bars, open bags of graham crackers and marshmallows … things end up in the dirt!  Make S’mores in the backyard … same story!  I guess we are just messy people ;)

Toasty Marshmallows

Before we leave for a camping trip, I try to do as much food prep as possible at home … anything to make camping a little easier.  Making the chocolate lined cones at home would ease S’mores assembly in the dark!  We do have lanterns, usually not in the right places ;)

It took me a long time to convince my hubby that camping can be fun … I would ask to go camping … he would answer NO!  His excuse was that he did enough camping while he served in the Army.  I finally convinced him that my idea of camping is nothing like what he experienced … it’s close to glamping and I do believe in restrooms with showers!

You will need …

  • Sugar Ice Cream Cones
  • Chocolate or candy coating (milk or dark) (1 pound should coat 12-15 cones)
  • Chocolate Sprinkles
  • Large Marshmallows
  • Graham Crackers

Let’s get started …

s'mores cone directions

  1. Line a tray with wax paper or parchment.  Fill an ice cream cone with melted chocolate or candy coating … use milk chocolate or dark, which ever you prefer.
  2. Pour the melted chocolate out of the cone … shake or tap cone to help chocolate out.  You can make the chocolate layer as thin or as thick as you like.
  3. Dip the edge of cone in sprinkles.
  4. Lay on wax paper and chill for a few minutes.

Store in an airtight container until ready to use!

I use 2 marshmallows per cone … Son #3 says to use 3 marshmallows!

I just learned about this!

We need to celebrate … don’t we?

Since I don’t have a campfire going right now … I made S’mores Bars in the oven ;)

Graham cracker crust + soft melty chocolate + toasted marshmallows … it all adds up to s’mores bars!

I got this recipe from my friend, Dinaz, who got it from Betty Crocker. Both of us made a few changes.

I added peanut butter to the chocolate because … it keeps the chocolate soft and keeps the hubby, my Peanut Butter Man, happy :)  If you don’t want peanut butter … just leave it out … it still tastes great.

This recipe goes together very quickly and easily.  Because of this … I have one word of advise … DO NOT TRY TO MAKE S’MORES BARS AND MULTI-TASK!!!  I will explain later.

This is what you will need …

  • Sugar Cookie mix
  • Graham Cracker Crumbs
  • Milk Chocolate Chips
  • Butter
  • Peanut Butter
  • Mini Marshmallows

Combine the cookie mix and graham cracker crumbs …

Stir in melted butter …

Smoosh (that’s a technical term :)) or spread in pan and bake …

WARNING – DO NOT talk on the phone with your friend, Cathy, and forget to set the timer or to take a photo of the baked crust :)

While the crust is baking, add peanut butter to chocolate chips …

Microwave for about 1 minute and stir …

Spread chocolate mixture on baked crust that was baked a few minutes too long … because I was on the phone and forgot to set the timer … unless you like it crispy …

Sprinkle marshmallows over chocolate and put in the oven on broil …


I should have been watching the toasting a little more carefully … I wanted even toasting … on the other hand … maybe I made everyone happy … some of my guys like marshmallows that are REALLY toasty ;)

For the record … the hubby wants his bars cold … Son #2 wants no marshmallows … Son #3 thought they were too crispy … I need to stop multi tasking while baking ;)

Peanut Butter S’mores Bars

(adapted from Betty Crocker)

  • 1 pouch (1 lb 1.5oz) Betty Crocker sugar cookie mix
  • 1 cup graham cracker crumbs
  • 1 cup butter, melted
  • 3 cups milk chocolate chips (18 oz)
  • 1 cup peanut butter
  • 4-1/2 cups mini marshmallows
  1. Heat oven to 375°F.  In large bowl, stir together cookie mix and crumbs.  Stir in melted butter until soft dough forms.  Press into ungreased 10″ x 15″ (jelly roll) pan.
  2. Bake 13-18 minutes or until set.  The longer you bake the crust … the crispier it becomes and almost toffee like.
  3. Add chocolate chips and peanut butter to a microwave safe bowl.  Microwave for about 1 minute on high and stir.   Pour peanut butter/chocolate mixture over crust and spread evenly over crust.
  4. Set oven control to broil.  Sprinkle marshmallows over melted chocolate.  Broil with top 5 to 6 inches from heat 20 to 30 seconds or until marshmallows are toasted.  (Watch closely; marshmallows will brown quickly.)  Cool 10 minutes, cut and serve or cool completely and store tightly covered.

I did place some room temperature bars in the microwave for 15 seconds.  That made the chocolate melty and the marshmallows puff up …

I just wanted to share my not so brilliant discovery …

A few years ago, in Tennessee, I visited Bass Pro Shop for the very first time.

I love gadgets … especially for cooking … camping too.

I found this S’mores Maker … it was hard to fit in the suitcase and on the plane … in fact I was surprised that the TSA didn’t question it … but I had to have it!  We camp every summer with two other families where we all break out our new camping gadgets, games, cocktails, etc.

Well, the truth is, we like making s’mores the old-fashioned way … with the marshmallows on the fork.

We do like to grill asparagus … so here is my brilliant discovery …

Just drizzle the asparagus with a little olive oil, salt and pepper … grill one side for 5 minutes … flip it over and grill for 5 more minutes.

I knew that I really needed this gadget … I just didn’t realize how I would use it!
